      Banana Nut Bread with White Whole Wheat Flour

      • 2 cups white whole wheat flour

      • 1 cup sugar

      • 2 tsp baking powder

      • 1/2 tsp baking soda

      • 1/2 tsp salt

      • 2 large eggs

      • 1/2 cup canola oil

      • 3 ripe bananas

      • 1/4 tsp orange zest

      • 1/2 cup milk

      • 1 cup pecans or walnuts, chopped


      Preheat oven to 350 degrees.


      Combine flour, sugar, baking powder, soda and salt in bowl. Mix well with flat beater. Add eggs, oil, bananas, zest and milk. Mix until dry ingredients are just moistened.


      Fold nuts in with mixer on low or by hand.


      Pour into standard 9x5x3-inch well-greased loaf pan. Bake 1 hour.


      Let cool 10 minutes before removing from pan. Cool completely on wire rack. If using smaller loaf pans, bake approximately 45 minutes.
