Boudin on French bread Do-Boy
Makes 2 sandwiches
- 1 package Zummo's Boudin sausage
- 1 green bell pepper julienned
- 1 medium onion julienned
- 1 fresh picked tomato
- fresh baked French bread cut into 4-5 inch sandwiches
- garlic butter
- provolone cheese
Sautee onions and peppers until soft. Set aside. Sautee both boudin sausages until golden (use a little garlic butter).
Brush inside of French bread (both top and bottom) with garlic butter. Cut sausage into 2 pieces. Place side by side on bottom of French bread. Top with peppers and onions, 2 slices of tomato, 2 slices of provolone cheese.
Preheat oven to 350 degrees (Note: 1 slice of cheese should be on each side of sandwich before baking). Place open face on baking sheet, and bake until cheese is melted. (Not too long or bread will become too crispy!).
