- 1 medium onion
- 1 medium bell pepper
- salt and pepper to taste
- shredded Queso Blanco cheese (about 1.5 cups)
- 2 Ribeyes smoked and grilled over applewood to medium or medium rare. Thinly sliced (omit fatty sections).
- onion buns, brushed with garlic butter
- 4 oz. garlic butter
Drizzle garlic butter in sauteed pan. Toss in onions. Caramelize a little, toss in green peppers and sliced Ribeye. Sautee about 4-5 minutes, tossing frequently.
Toast buns butter side down in large frying pan until golden brown. Top with meat mixture.
