Chicken Cordon Bleu
- 1 chicken breast (pounded 1/8 inch thick)
- 1 slice prosciutto
- 2 oz. mozzarella
- 1/8 teaspoon Italian seasoning
- 1 pint buttermilk
- 1 cup seasoned bread crumbs
- 1/3 cup flour
Lay chicken flat and place prosciutto slice on top of chicken. Ball up mozzarella cheese with Italian seasoning and put on top of chicken as well.
Fold chicken over the cheese, tuck in sides and roll up. It should kind of look like a football.
Dip chicken in buttermilk, then coat in crumb and flour mix.
Sear chicken on all sides in a pan with a little oil. Finish baking in oven at 350 degrees for 10-15 minutes. Internal temp of the chicken should be 160 degrees.
