Enchiladas




  • 3-4 chicken
    breasts cut into bite-sized pieces

  • 16oz jar salsa
    (any kind)

  • 8oz cream
    cheese

  • 2-3 cups
    shredded cheese (any kind.. I like the Mexican or taco cheese)

  • 10 flour
    tortillas

  • Lettuce,tomatoes,
    olives, sour cream, etc for topping



Preheat oven to
350 degrees. Cook chicken in skillet with 1c of salsa. When cooked, add cream
cheese and 1c of shredded cheese and stir until melted and mixed. Spoon mixture
onto the middle of a tortilla, roll up like a burrito and place into a 9x13
pan. Continue this with the rest of the mixture and tortillas. Cover the
enchiladas with the rest of the salsa and shredded cheese. Bake at 350 for
15-20 minutes until the cheese is melted and bubbly. Serve with your choice of
taco toppings... Lettuce, tomatoes, onion, salsa, etc. Enjoy!!
