Chicken Tortilla Soup

  • 1 lb boneless chicken (use breasts or thighs)

  • 5-6 cups chicken broth

  • 1 onion chopped

  • 1 green bell pepper chopped

  • 1 clove garlic, minced

  • 1 tsp salt

  • 1 15 oz. can diced tomatoes

  • 1 10 oz. can Ro-Tel Tomatoes

  • 1 15 oz. can pinto beans

  • 1 14 oz. ca black beans

  • 1 pkg. taco seasoning

  • 1 pkg. ranch dressing mix

  • 1 can yellow/white corn


Cook chicken in broth, onion, green pepper, garlic and salt. Cook until chicken is tender and cooked. Remove chicken; cool and cut up into small pieces. Return to broth and add all remaining ingredients. Cover and simmer about 15 to 20 minutes. Serve with tortilla chips. Can also garnish with shredded cheese, sour cream, black olives, green onion and diced peppers.
