Corn Salsa, Chipotle Chicken, and Rice and Beans


Corn Salsa

  • 2 cans corn, drained

  • 1 can green chilies, drained

  • 1 can diced tomatoes, drained (optional)

  • fresh cilantro, to taste

  • lime juice, to taste

  • 1 red onion, chopped

  • sugar, to taste

  • salt, to taste

  • hot sauce, to taste (optional)

Chipotle Chicken

  • several chicken breasts, cut into chunks

  • lime juice, to taste

  • 1 packet fajita seasoning

Cook chicken until no longer pink. Add lime juice and fajita seasoning and mix well. Simmer 2 minutes.

Rice Mixture

  • 1 cup rice, cooked as directed

  • fresh cilantro, to taste

  • lime juice, to taste


  • 1 can pinto beans

  • 1 can black beans

  • cumin, to taste

Pour beans into saucepan and add cumin. Cook until hot.

Add all ingredients to a tortillas with sour cream, lettuce, cheese and any other desired toppings. Serve and enjoy!
