- 4 c. sugar
- 1 c. white corn syrup
- 3/4 c. cold water
- 3 egg whites
Combine sugar, corn syrup and cold water in saucepan and heat to 260 degrees (hard ball stage). Stir only until sugar is dissolved, then add 1 tsp vanilla (or flavor of choice) at the last minute.
Whisk 3 egg whites until stiff, peaks will form. Slowly pour in syrup mix while blending at high speed until you can see ridges or it holds its shape. It will get thick.
Using two spoons to make balls on greased wax paper, give it a swirl for looks. Should firm up within 20 minutes.
