Fried Oven White Fish


      Fried/Oven Fish

      Bake: Preheated 400 degree oven Serves: 4

      Time: 10 minutes

      In 9x13 pan combine:

      • 1 cup water

      • 1 Tablespoon lemon juice

      In lemon juice water, place:

      • 4 white fish fillets

      Soak fish 10 minutes on each side

      Remove fillets from water, pat dry with paper towel and lightly sprinkle over each fillet:

      • Salt

      • White pepper

      • Tarragon

      In galloon-size zip-lock bag, combine:

      • 1/4 cup corn meal

      • 1 Tablespoon unbleached or white whole wheat flour

      • 2 Tablespoon pecan, finely chopped

      Seal bag and shake well. Add fillets one at a time to bag, shake well and place on platter. Let stand a least 15 minutes to dry,

      In a ovenproof skillet on medium to high heat, add:

      • 2 Tablespoons canola oil

      Place fillets in skillet and brown each side, approximately 1 minute on each side. Then place skillet in oven and bake as instructed above.

      Garnish with lemon slices and serve immediately.

      Tartar Sauce

      Combine all ingredients with wire whisk:

      • 1 cup mayonnaise

      • 1 Tablespoon horseradish

      • 1 teaspoon Worcestershire sauce

      • 1 clove freshly squeezed garlic

      • 3 Tablespoon sweet pickle relish

      Place in a small bowl. Chill.

      Walnut Sauce

      • 1 cup of walnuts

      • 1 cup of whipping cream –room temperature or slightly warmed

      • 1 clove garlic squeezed

      • 1 slice of white bread

      • 1 dash salt

      • 1 cup of parmesan

      Put all ingredients in blender or food processor and blend well. Pour over penne pasta cooked al' dente and add more parmesan cheese if desired

      serves 4

      Can be used as main meal or as a side dish
