- 1 lb "good" chorizo
- 6 eggs, lightly beaten
- 1/2 onion medium diced
- 1 cup fresh spinach
- 1 avocado sliced and sprinkled with salt and pepper
Saute onions until transparent. Add chorizo, brown until completely cooked, breaking large chunks as you go. Add cilantro, spinach, toss to mix. Serve with stack of warm tortillas and avocado.
