      Italian Sausage Vegetable Soup

      • 1 lb Italian Sausage (sweet, mild or hot)

      • 1 med onion chopped

      • 1 green pepper chopped

      • 2-3 cloves garlic-minced

      • 1 14.4oz. can tomatoes-Italian

      • 1-2 14.5oz. can Great Northern Beans-un drained

      • 1 cup carrots

      • 1 medium zucchini-cubed

      • 1 cup spinach

      • 4 cups chicken broth

      • 1 tsp Italian seasoning

      • 1 tsp basil

      • fresh grated Parmesan cheese



      1. Brown sausage, drain if necessary

      2. Saute onion and peppers until tender, add garlic

      3. Add tomatoes, broth and carrots. Simmer 15 minutes or until carrots are almost tender.

      4. Stir in beans and zucchini and simmer 10-15 minutes longer.

      5. The last five minutes stir in spinach,serve with grated Parmesan cheese.
