Lavender Cupcakes


Preheat oven to 325 degrees ("Convection Bake") or 350 degrees for regular "Bake".

In food processor, combine…

  • 1 ½ cups sugar

  • 1 Tablespoon lavender

Beat in bowl of stand mixer…

  • Sugar/Lavender mixture

  • ½ cup butter (1 stick or ¼ of a pound)

In separate bowl, combine…

  • 2 cups flour

  • 2 teaspoons baking powder

  • ½ teaspoon salt

Combine in liquid measuring cup...1 cup whole milk and 1 tsp vanilla

Add flour and milk mixtures to the butter/sugar mixture alternating between flour and milk and beating well after each addition. (Start and end with flour, so…1/3 of flour mixture, ½ of milk, 1/3 of flour, ½ of milk, remaining 1/3 of flour)

In separate bowl…Beat 4 egg WHITES until soft peaks form. Fold egg whites into batter.

Bake regular sized cupcakes approximately 18-20 min
