      Lemon Coconut Bread

      Lemon Coconut Bread


      1 box lemon cake mix
      1 box instant lemon pudding
      1 cup hot water
      1/2 cup oil
      4 eggs
      1/4 cup coconut, plus 1/4 cup additional coconut to sprinkle on top if you choose


      Combine all ingredients in large bowl and mix 4 minutes with electric mixer on low/medium. Pour into 3 medium or 2 large greased loaf pans. Bake @350 degrees . Around 35 minutes for medium loaf pans, around 50 minutes for large loaf pans (or until bread springs back to the touch). Also can be cooked in muffin form...adjust time to around 10 to 15 minutes for muffin tins.


      Variations.....Substitute 1/4 poppy seed for the coconut for a lemon poppy seed
      Gingerbread Pecan...substitute a spice cake mix and 1 pkg of Gingerbread pudding mix, 1/4 cup chopped pecans, with extra pecans to sprinkle on top if so desired.
      Rich Chocolate Chip..substitute a chocolate cake mix and chocolate pudding mix, 1/4 cup mini chocolate chips
