- 4-oz. cod filet
- 2 oz. red pepper, chopped
- 2 oz. green pepper, chopped
- 2 oz. onion, chopped
- 1 cup spinach, chopped
- 2 oz. black olives, chopped
- garlic, to taste
- water, enough for poaching filet
- white wine, enough for poaching filet
Poach filet in water, garlic and white wine, to an internal temperature of 165 degrees.
Saute vegetables in garlic and olive oil.
Serve fish and vegetables over a bed of rice. Garnish with feta cheese and a lemon slice.
