Mojito Grilled Chicken


Mojito Marinade

  • 4 oz. coconut rum

  • 2 oz. lime juice

  • 2 oz. 7up

  • 2-4 mint sprigs

  • 2 Tbsp coconut cream

  • 2 oz. mint flavoring

  • 1 oz. tequila

  • 1 tsp sugar

Combine all ingredients in mixing bowl and marinade desired meat 4-5 hours, or overnight.

Grill meat over hot coals (hickory smoke pellets are recommended).

Mojito Diablo

Add to the Mojito Marinade recipe:

  • 4 oz. creme de cassis

  • 2 Tbsp red currant jelly

  • 4 oz. Rum Chata

Combine all ingredients in a medium saucepan. Bring to a light boil. Reduce heat immediately to low.

Whisk in cornstarch slurry. Allow to thicken for five minutes.

using pork loin, marinade overnight or up to a day and a half.
