- 6.6 oz. whole milk
- 1.2 oz. bread flour
- 1.2 oz. butter
- 3.5 oz. granulated sugar
- 2.4 oz. egg yolks, about 3 each
- 4 oz. egg whites, from about 5 eggs
- 4.8 oz. dark chocolate 70%
- .25 oz. salt
Preheat oven to 375 degrees. Butter Ramekins, coat with sugar. Heat eggs and sugar on stove top. Combine butter and flour with hands. Add to milk-sugar mixture. Bring to a boil and cook for 2 minutes.
Add chocolate and then egg yolks; whipping egg whites until you get soft peaks. Fold into chocolate mixture. Fill ramekins with soufflé mix. Place on baking sheet and cook for exactly 17 minutes. Garnish with cream dessert sauce of choice.
