- 1 lb. sausage
- 1 package hash browns
- 1 1/2 cups onion, chopped
- 1 1/2 cups green peppers, chopped (or amixture of green and red)
- 1 16-oz. package cheese, shredded
- 5 eggs
- 1 cup milk
Preheatoven to 350 degrees.
Brownsausage; drain well. Place hash browns in a 9x13-inch pan. Top with onions,green peppers, cooked sausage and cheese.
Mix eggsand milk and pour over cheese. Bake for one hour.
Uncookeddish can be frozen for later use or left in the refrigerator overnight andcooked in the morning.
- 1 1/2 tsp bacon grease
- 1 slice bread
- 1 egg
- salt, to taste
- pepper, to taste
Melt bacongrease in a non-stick pan over low heat. Cut a 1 1/2 - to 2-inch hole in centerof bread and put in hot skillet.
When sidefacing down is lightly toasted, about 2 minutes, flip and crack egg into hole,and season with salt and pepper.
Continueto cook until egg is cooked and mostly firm. Flip again and cook one minutemore to assure doneness on both sides. Serve immediately.
Sausageand Egg Breakfast Sandwich
- 4 English muffins
- 2 eggs
- 4 sausage patties (regular or turkeysausage)
Cooksausage in a skillet or use precooked patties and heat them in microwave.
Beat eggsand cook in a skillet. Cook eggs like you would to make an omelet. Once eggshave cooled, cut them into quarters to have one egg for each muffin.
Build thesandwich, topping muffin with egg and sausage.
