Pan Seared Rib Eye with Garden Veggies
- rib eye
- olive oil
- salt and pepper
- veggies of choice
- 3-5 oz. red wine of choice
In cast iron skillet, combine butter, garlic, thyme, and basil and slowly cook until butter is a brownish color (over low to medium low heat).
Turn heat up to high and place in rib eye. At same time in separate pan over medium heat add a tablespoon of olive oil and a tablespoon of butter, garlic, salt and pepper; add in veggies of choice and cook to desired tenderness.
Allow steak to cook 2-3 minutes on each side, then remove from pan and allow to rest. Meanwhile, turn heat down to medium and deglaze pan with 3-5 oz. of red wine of choice; allow sauce to simmer until desired thickness is achieved.
Plate all components and enjoy!
