      Porcupine Meatballs







      Aunt Bea's Porcupine
      Meatballs





      • 2 ½ pounds ground beef

      • ¼ c. diced onions

      • 1 ¼ c. instant rice, cooked (1 ½ c. water cooked in micro
        for 5-7 minutes

      • 2 pkg. crushed saltine crackers

      • 3 eggs

      • 2 t. salt

      • 1 t.
        pepper




      Mix well. Shape into balls (Used a #12 cookie dipper for 3oz
      portions.


      Mix 2-11oz tomato soup with 1 can water and pour over
      meatballs.


      Bake at 325 for 45-60 minutes. Makes 20 meatballs.


      Can be frozen.
