Rajin' Cajun Catfish


  • 6-7 oz. raw catfish

  • enough of Blackened Seasoning to coat catfish on both sides

  • 3 oz. mozzarella cheese shredded

  • 1/4 inch cooking oil

Heat oil to 320 degrees. Press fish into seasoning. (should look encrusted).

Lay fish down carefully ( so as not to splatter on yourself). Cook on both sides about 4 minutes. Remove to an oiled baking sheet. Place a healthy helping of cheese atop fish. Bake until cheese is golden and bubbly.

Serve with favorite starch and vegetables.
