On The Menu: Grilled Peach Chicken Salad

Grilled Peach and Chicken Salad

INGREDIENTS:

1/4 c. balsamic vinegar

2 Tbls. olive oil

1/4 c. honey

2 tsp. salt

1 tsp. pepper

4 peaches

2 boneless, skinless chicken breasts

Mixed greens/salad

1 c. grape tomatoes

1/2 cucumber

1/2 red onion

1/2 c. pecans

DIRECTIONS:

Add balsamic vinegar, olive oil, honey, salt and pepper to a bowl and mix well

Halve peaches and remove pit.

Lightly brush cut side with balsamic vinaigrette and grill for 5 minutes over medium heat until brown.

Salt and pepper chicken and brush with olive oil.

Grill chicken until brown on both sides.

Brush vinaigrette over chicken

Slice peaches and chicken for salad.

Add ingredients for salad along with peaches and chicken.
