Apple Pie Baked Oatmeal
- 2 large apples
(sweet-tart apple such as Honey Crisp, Jonagold, Fuji)
- 2 cups Old
- 1 Tsp baking
- 1/2 cup chopped
- 1 1/4 tsp
- 1/4 tsp ground
- 1/4 tsp nutmeg
- 1/4 tsp ginger
- dash of salt
- 2 cups milk
(milk of choice)
- 2 eggs
- 1/3 cup pure
- 1/4 cup
- 2 tsp vanilla
Preheat oven to 375. Spray a large pie dish (10 inch)
with cooking spray and set aside.
Combine dry ingredients: apples,
oatmeal, baking powder, spices and salt.
In another bowl combine wet ingredients: milk, eggs, maple
syrup, oil and vanilla; whisk until well combined.
Pour wet ingredients into dry ingredients and stir well.
Pour into pie pan and bake on a cookie sheet for 45 to 50
min; cover with foil for the last 5 min or so if top is getting too brown.
for 10 min. Cut into wedges and eat plain or with a dollop of low fat whip
cream or a drizzle of maple syrup.
