- 5 boneless, skinless chicken thighs
- 1 cup rice
- 1/4 cup onion
- 1 can diced tomatoes in juice
- 1 can rotel
- Garlic powder
- Vegetable oil
- 1cup water
seasoned (salt, pepper, garlic powder, Cumin to taste) chicken in vegetable oil 2
minutes per side. Take out set aside.
Brown onions and rice do not burn. Add
tomatoes and rotel. Season to taste (same seasoning as chicken).
Add chicken and 1 cup
water, cover and simmer on low for 30 min or until rice is tender.
with pico, guacamole, sour cream on warm flour tortillas.
