- 1/2 cup fresh spinach (plus extra for the wrap)
- 1/2 cup flat leaf parsley
- 2-3 green onions or 1 Tbsp fresh chives, chopped
- 1 clove garlic, chopped
- 1/4 cup mayonnaise
- 1/2 cup sour cream
- 1 tsp white wine vinegar
- 1 tsp lemon zest
- salt, to taste
- pepper, to taste
- 4-5 oz. cooked chicken breasts, small diced or shredded
- 4 large tortillas/wraps
Place all ingredients in food processor until mixture is smooth.
Transfer mixture to a mixing bowl. Add chicken and combine well.
Place chicken mixture and extra spinach into tortilla and roll, folding in ends as you go.
