Mother's Day Breakfast


  • 1 baked potato, cubed
  • 1/4 cup sweet red pepper
  • 1 tbsp. thin sliced green onion
  • 1/4 cup cooked asparagus
  • 1 tbsp. unsalted butter
  • 2 eggs
  • Salt and pepper, to taste
  • Fruit for garnish, optional
Sauce ingredients:
  • 1/4 cup brandy
  • 1 cup heavy or whipping cream
  • 1/2 cup fully cooked breakfast sausage
  • 1 cup fresh spinach
  • 1/2 roma tomato
  • Salt and pepper, to taste
Get skillet medium hot and remove from heat. Quickly add brandy and return to heat (expect flame) and cook until flame dissipates. Add heavy cream, sausage, spinach, tomato and salt and pepper and reduce by half. Set aside and keep warm.

In a medium hot skillet, add potatoes, red pepper, onion, asparagus and butter; cook until warmed through. Season with salt and pepper and set aside to keep warm.

Cook eggs in any desired fashion.

Place potato mixture on the plate, top with eggs and sauce. Garnish with fresh fruit, if desired.
