On The Menu: Chicken, Spinach, Cranberry Wrap
It is National Sandwich month, so I thought I would make this as a quick/easy option for lunches or supper with school and all those activities starting!
Chicken, spinach, cranberry wrap
All you need:
3 cup Chicken, cooked
3/4 cup Celery
1/2 cup Cranberries, dried sweetened
1 cup spinach leaves
1/4 cup olive oil Mayonnaise
1/4 cup plain or lemon flavored Greek yogurt
pepper, to taste
1/2 cup pecans or walnuts, chopped
whole grain tortillas or wraps
All you do:
1. In a large bowl combine chicken, cranberries, pecans and celery
2. Stir to combine
3. Add mayonnaise, salt, white pepper and mix well
4. Place tortilla on a plate.
5. Layer with a spoonful of chicken mixture. Add a layer of spinach leaves.
6. Roll wrap, cut and enjoy
