- 2 pkgs Knox unflavored gelatin
- 1 1/2 c. sugar
- 1 1/2 c. boiling water
- 5 c. your choice of juice; cranberry, cherry, raspberry strawberry, concord grape or blueberry
- 1 c. lemon or lime juice
- 1 (46 oz.) can unsweetened pineapple juice
- 1 (2-liter) bottles lemon-lime soda or ginger ale
Mix well, cover with a lid and place on a cookie sheet when carrying it to the freezer. Place on a flat surface so the punch will freeze evenly and to prevent spilling. Freeze until punch is slightly firm, then make a design using the fruit of the juices of the punch. Allow the fruit to set for about 1 hour. Cover the fruit with the soda you are using for the punch and let it freeze for at least 2 days.
Remove from the freezer 3-5 hours before serving. When thawed enough to unmold place frozen punch in punch bowl fruit side up.
About 1 hour before serving, add lemon-lime soda or ginger ale to the punch. With a fork or small knife break up frozen punch to make a slush. Serve in a small punch cups. Makes 30-40 Servings
