      Spaetzle

      • 1 cup flour
      • 1/4 cup plus 2 Tbsp milk
      • 1/2 tsp nutmeg
      • 1 pinch salt
      • 2 eggs, beaten
      • 2 Tbsp butter
      • Swiss or gruyere cheese, grated (optional)
      • parsley, chopped (optional)
      • scallions, sliced (optional)

      Bring pot of water to a boil.

      Combine all ingredients until smooth. Pass through a colander into boiling water.

      Melt butter in saute pan.

      Once dumplings float, remove with slotted spoon and saute in butter 2 minutes, tossing to mix well.

      Grate cheese atop hot spaetzle and sprinkle with parsley or scallions.
