      Summer Salmon Salad

      Ingredients:

      • 1 salmon fillet
      • 3 strawberries
      • 3 radishes
      • 3 mini bell peppers
      • 2 mushrooms
      • 1 bunch of asparagus tips
      • 3 tbs butter
      • 1 garlic clove
      • 1/2 shallot
      In a pan on low heat, melt butter and sweat garlic and shallot for 5 minutes. Turn up to medium high heat and place salmon in pan. Cook for 2 minutes on each side; remove from heat.

      In a bowl, combine veggies and strawberries. On a plate place greens and salmon on top. Enjoy!
