Summer Veggie Pasta

Ingredients:

  • 1/2 c. diced yellow squash
  • 1/2 c. diced zucchini
  • 1/2 c. diced tomato
  • 1/3 c. diced green onion
  • 1/4 c. shredded Parmesan
  • juices of 1/2 orange, 1/2 lime, and 1/2 lemon
  • pasta of choice, pre-cooked
  • zest from juiced fruits
  • splash of white wine

Directions:

Over medium-high heat, combine juices from citrus fruits and zest; add in all veggies and allow to cook for 2 minutes. Add in white wine and salt and pepper. Allow to cook for 4 minutes. Add in Parmesan cheese and toss in pasta. Serve warm or cold.
