- 1 red pepper, chopped
- 1 yellow pepper, chopped
- 1 onion, chopped
- 3 cloves of garlic, minced
- 4 oz. chorizo
- 1 tbsp. butter
- 1 tbsp. olive oil
- 2 tbsp. flour
- 2 cups chicken broth
- 2 15 oz. cans great white northern beans
- 1 whole rotisserie chicken, pulled from the bones and shredded
- 1/4 cup chopped cilantro
- 1 cup roasted corn
- 2 cups table cream
- 1 tsp. turmeric
- 1 tbsp. cumin
- 1 tsp. paprika
- 1 tsp. ground coriander
- salt and pepper to taste
Saute peppers, onion, butter and olive oil until soft.
Add garlic and chorizo. Cook 3-5 minutes.
Add flour and cook for 2 minutes.
Add chicken broth. Heat until thickened, about 7-10 minutes.
Add remaining ingredients except cilantro.
Add cilantro right before serving.
Garnish with cheddar cheese or sour cream.
