SUMMER PEPPER SALAD

1 green bell pepper, seeded & chopped

1 red bell pepper, seeded & chopped

1 yellow bell pepper, seeded & chopped

1 medium cucumber, seeded & chopped

1/4 cup chopped fresh parsley

8 oz crumbled feta cheese

1 tablespoon olive oil

Mix all ingredients in a large bowl. Chill at least 30 minutes before serving. Yield = about 8 servings
